Crunchy Vegetable Wrap
This recipe suggests cabbage, carrots, red onion and lettuce, but you can use any raw or cooked vegetables that sound good to you.
1 whole-wheat, low-fat tortilla (10-inch size)
2 tablespoons light cream cheese or 2 tablespoons hummus
1 large leaf of curly lettuce
¼ cup shredded red or green cabbage
2 tablespoons shredded carrots
1 to 2 tablespoons chopped red onion
A few sprinkles of blue cheese
Spread cream cheese or hummus over tortilla. Top with lettuce leaf. Arrange the filling in a row along the center third of the tortilla. Roll tightly and cut in half.
