Baked Salmon with Dijon and Rosemary
4 boneless salmon fillets (about 5-6 ounces each)
½ teaspoon salt
½ teaspoon rosemary
¼ teaspoon pepper
¼ teaspoon dried basil
¼ teaspoon dried parsley
1-2 green onion stalks, chopped
1 1/2 teaspoons olive oil
1 1/2 teaspoons Dijon mustard
¾ teaspoons lemon juice
Preheat oven to 450 F.
Mix together salt, rosemary, pepper, dried basil, dried parsley, green onions, olive oil, mustard and lemon juice.
Line large baking sheet with foil and spray with cooking spray.
Place fish skin-side down on foil. Brush fish with mixture of ingredients.
Bake in top third of oven until cooked through and crust begins to brown (about 20 to 25 minutes).
